Spicy Cream of Celery Soup
Ingredients:
1 extra large bunch of celery, diced
2 jalapeno or serrano peppers, diced
1/3 C raw cashews
2 C water
1/3 C cold pressed extra virgin olive oil
1/2 C fresh lime juice (or lemon)
1 T raw honey
2 t sea salt
1 red bell pepper, diced
Directions: Place all ingredients (except red bell pepper) in blender and blend until smooth and creamy and pour into large bowl. Stir in the diced bell peppers. Serve this delicious, refreshing soup room temperature or cold.
