Grammy Ethel’s Delicious Cranberry Relish
(This is what Ethel Sinkewitz brought over to our house for Thanksgiving dinner yesterday and it is so AMAZING I had to share the recipe!!!  By the time we thought about taking a picture of this beautiful dish, it was almost gone.)

Ingredients:

12 oz fresh cranberries (not dried)

1 orange, peeled and seeds removed

1 apple, cored

8 – 10 oz. dates, stems and pits removed

2/3 C raw walnuts

Juice of 1 orange

Directions:

Place all ingredients (except orange juice) in a food processor and process until coarsely chopped.  Place in a beautiful bowl and mix in the orange juice.

Vanilla Almond Milk

Vanilla Almond Milk

Ingredients:

vanilla almond milk

1 C raw almonds, soaked overnight, skins removed

2 C pure water

2 or 3 medjool dates (take out the pits)

1 vanilla bean, seeds scooped out (or 1 or 2 t pure vanilla extract)

Pinch of sea salt

Directions:

After soaking and removing the skins from the almonds, place the almonds and water in the blender and blend thoroughly.

Strain out the almond pulp with a nut bag, sprout bag, or cheesecloth.  You can save the pulp for making nut cheese or no-bake cookies later.

Return strained milk to blender, add the remaining ingredients, and blend thoroughly.

You will have a delicious, nutritious, frothy treat!  My children say it tastes like vanilla icecream.

Almond Butter, Oats, & Agave Snack

My children came up with the idea for this snack and I finally tried it…. and WOW!  It is really delicious.  They call it “Almond Butter & Oats”.

Mix together the following ingredients (adjust amounts to fit your personal taste):

1/2 C Old-fashioned Rolled Oats
1/4 C  Almond Butter
2 t Agave Nectar
dash of salt

Enjoy!!!
